Easy Marmalade

My most favourite thing to make is jam. I love to make it and I love to eat it. When I go to craft fairs or markets I always track down the homemade jam stand. It's one of those things that always taste better homemade.

I have always been worried about making marmale though because it seems to be very time consuming and require specialist equipment but I thought I would try and come up with an easy marmalade recipe.

I have found several 'easy' recipes on the internet and after trying a few, here is the one that works for me:

- Cut 5 oranges in half and scoop out the flesh, thinly cut up the skins and wizz the pulp in a food processor
- Put everything in a pan, add 4 tbsp of lemon juice, 600ml of water and 500ml of orange juice. Bring to the boil and simmer for 1 hour until the rind is soft.
- Add 1kg of sugar, and boil for about 13/15 mn. This was a good opportunity to use the thermometer I got for my birthday and hadn't used yet.
- Let it cool down a bit and put into 5 small sterilised jars. I sterilise my jar by putting them in the oven for 30mn at 100C.
